September Supper Club: Cooking Light Summer Menu Theme


After our long summer break from Supper Club we all came back together again for dinner hosted by Derek & Lisa.
This photos is from several years ago before our members Tim & Michelle moved out of state and Robin & Shannon are missing from the photo.
Our Supper Club is something we look forward to, are committed to and try to not miss unless there is something that just can't be avoided. We've participated in our supper every third Saturday of the month for @ least the last 8 years (at least we think 8 years, can't pin point the exact year we began...but it's been up and going for many years now.) It's just a big part of who we are and what we do.

This month our hosts Derek & Lisa were inspired by the Cooking Light The Ultimate Summer Cookbook Menu for our theme. Up until the past few days before our actual September Supper Club gathering we had some "summer" like weather. But of course for this evening the fall clouds, cool and wet arrived. It was just bad luck & typical Washington weather I suppose.

We arrived to their home in the drizzle...we started as usual with appetizers. I could personally live on appetizers so I always love when that is our assigned course of the meal for supper club. We caught up on all the summer happening over appetizers.

We chose to do the Grilled Pepper Poppers

 and the Fig, Prosciutto and Gorgonzola Salad for our dishes.
Shannon & Robin contributed the Chilled Avocado Soup with Seared Chipotle Shrimp which was absolutely excellent. Had been wanting to try a chilled avocado soup all summer actually.
Next we moved onto our Main Course from Derek & Lisa. They prepared the Brined Pork with Plum & Jicama Relish. The pork was moist and cooked perfectly.

Accompanied with a side of Shaved Summer Squash with Prosciutto Crisps contributed by Kris (Jeff was at a boxing event on this evening.)

It was a great, light meal. And a good time was had by all as usual.

Next it was onto dessert. A special treat was shared by Jenni & Arnie as they opened a bottle of iced dessert wine to accompany the dessert they served.

They prepared The Rich Chocolate Pudding. Which was very chocolaty and the raspberries & whipped cream were perfect toppings.

We look forward to October's gathering. Just can't believe Summer flew by as fast as it did.
